
Ingredients
700 grs
tuna
4 cloves of
garlic
Oregano
Salt
600 grs red beans
Olive oil
and vinagre
4 sweet
potatoes
4
medium-sized onions
4 potatoes
4 corn-cobs
Prepararation
Three or
four days prior St. John's Day, prepare tuna
Make a few
cuts, season with salt, sliced garlic and oregano
Let it rest
for a 6 hours
Soak tuna
in water.
At midnight
(Eve of St. John's Day) cook the tuna, beans and onion for 1 hour Separately,
cook the sweet-potatoe, potatoes and corn-on-the-cob. When ready remove from
cooker
Tuna is
served with cooked vegetables and seasoned with olive oil and vinagre
Serve with
São Vicente wine
NOTE: This
dish can be served with cucumber salad with tomatoes and onions seasoned with
olive oil and vinagre
